Freezing and Tempering - Constellation Cold Logistics

Freezing

We can freeze your product using several different methods, depending on your requirements. This includes  blast freezing, chamber freezing, or plate freezing.

High-quality blast freezing tunnels are available across our network, with the capacity to blast freeze over 4,000 tonnes per week. Our specially designed blast tunnels rapidly bring your product to frozen temperature, minimising product crystallisation and ensuring superior product quality. Several of these tunnels can also accommodate specialised commodities such as hanging meat. We also have plate freezing capability, such as at our Tønsberg site and across Denmark. This enables rapid freezing of blocks or trays of product straight from production, allowing product to be densely stacked within the warehouse. Other freezing methods, such as spiral or carton freezing, are available on request.

Tempering

We have industry-leading tempering capability across our network. This enables you to safely defrost your product for further processing or distribution.

Our tempering tunnels are programmed to ensure product quality is retained through the defrosting cycle. Product is brought up to a chilled temperature in a controlled manner, minimising drip loss by circulating forced air through the tunnel. We also specialise in advanced tempering for the dairy industry, providing optimal defrosting cycles for butter and other commodities.

When you need your product defrosted quickly, we can also offer specialised tempering services such as cutting-edge microwave tempering, enabling rapid and reliable defrosting of product with a uniform temperature throughout the product and minimal drip loss.

Our tempering services can cater to various product types, including palletised, boxed, hanging meat, and unpackaged items.

FAQs

Blast freezing rapidly freezes products using cold air circulation in tunnels to minimise crystallisation and preserve quality and safety.

Chamber freezing brings the product to frozen temperature gradually within the frozen cold store chamber, whilst blast freezing is a more rapid process that involves placing the product in specialised blast freezing tunnels and circulating very cold air through them. Blast freezing has a much shorter freeze-down time, which is critical for certain product types to retain product quality, minimise crystallisation, and extend shelf life.

Microwave tempering is a tempering process which uses targeted microwaves to thaw products evenly, reducing drip loss and maintaining product quality. This is ideal for preparing items for further processing.

You can benefit from microwave tempering for a variety of product types, where it is critical to receive the product rapidly. Microwave tempering allows goods to be tempered in just 2 hours, rather than as long as 48 hours.

Plate freezing is a method for freezing goods which keeps them even fresher than traditional blast freezing methods. Goods are frozen in contact with cold plates which are cooled using a refrigeration system.

We employ strict quality controls in our blast freezing and tempering operations. You can read about our accreditations here.
